Sorting walnuts in the shell according to size takes place immediately after drying the walnut, before sale or before processing.
In commercial orchards, the walnut must be cleaned of the pericarp and dried. Without this preparation, it will be difficult to find a buyer for the walnut or the offered price will be small. But the highest value has the variety walnut, which is cleaned from the remains of the pericarp and dirt, dried to optimal moisture, sorted by size and packed in bags. Calibration maximizes the value of the walnut and allows you to earn 9-10% more on the same volume (according to the calculations of orchard owners).
Harvesting companies make money from the difference in the cost of buying walnuts from the public and selling them to large processing companies and exporters. This difference appears due to the formation of large batches and the pre-sale preparation of the walnut - that is, if washing, drying and calibration are required.
The goal of processing enterprises is to obtain a high-quality whole kernel for which the largest profit can be obtained. - Thanks to the processing of the calibrated walnut, the yield of the entire kernel on conical nutcrackers reaches 80%+. This is a really high indicator when processing large volumes of walnuts on the equipment.
